Combining a passion for baking and an ample supply of locally grown bananas, my “special touch” of fresh baked banana bread was born. Greetings with a friendly smile and this tasty treat have become my way to extend the spirit of aloha. In sharing this recipe, it is my hope that others will be able to do the same. So whether it is baked for clients, friends or your ‘Ohana, I have found that each homemade batch generally has the same result…they’ll go bananas!!! Aloha nui loa, Leah Lambros The Special Touch You’ll “Go Bananas” Over Leah Lambros holds a Master’s Degree in Research andTheory in Child Development from California State University, Sacramento. Makes 1 loaf Ingredients: ½ cup butter 1 cup sugar 2 eggs 10 ripe apple bananas (or 4 large smashed bananas) 1½ cup flour 1 tsp. baking soda 1 tsp. salt 1 tsp. vanilla ½ tsp. cinnamon ¼ cup chocolate chips Cream butter and sugar. Add eggs, smashed bananas, and vanilla, and stir. Sift flour, baking soda, cinnamon, and salt. Add to creamed mixture. Pour into greased loaf pan. Sprinkle topping over loaf before baking.
